Ozark Pudding Makes 2-3 servings. Extra delicious served with a scoop of vanilla ice cream. The egg, sugar, and pecans blend together into a gooey pecan pie taste. I bake this in a 1 liter dish. Apple Nut Bars In a bowl, whisk egg whites, sugar and vanilla for about 1 1 /2 minutes. Add flour and baking power; whisk for 1 minute. Fold in the apples and pecans. Pour into an 8 inch square baking pan coated with nonstick cooking spray. Bake at 350° for 25-35 minutes or until the bars test done. Cool. Yield: 1 dozen Now the trick here is to not eat the whole pan, because then it’s no longer diabetic. This past year I discovered a recipe for Apple Nut Bars in a Taste of Home diabetic cookbook. The end result tastes similar to my mom’s apple dessert. This one called for egg whites and less sugar. So try them both, and compare.
