- 2 cups flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1/2 cup butter
- 1/2 cup shortening
- 3 1/2 tablespoons cocoa
- 1 cup water
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
Preheat oven to 400°. Combine flour, sugar, and baking soda in large mixing bowl. In a saucepan, melt together butter, shortening, cocoa, and water. Bring to a boil and pour over dry ingredients. Mix well. Add buttermilk, eggs, and vanilla; mixing after each one. Pour batter into jelly roll pan. Bake for 20 minutes or until wooden toothpick comes out clean. Top with icing (recipe below).
- 1/2 cup margarine
- 1/3 cup milk
- 3 1/2 tablespoons cocoa
- 1 box powdered sugar
- 1 teaspoon vanilla
- 1 cup pecans
In large saucepan, mix together margarine, milk, and cocoa. Bring to a boil and remove from heat. Add powdered sugar and mix until smooth. Stir in vanilla and nuts. Pour over warm cake.
Note: If you don’t have buttermilk, you can substitute 1/2 cup of milk mixed with 1/2 tablespoon vinegar or lemon juice. Let this mixture sit for 5 minutes.
